Friday Lunch and Dinner


Spinach and cheese ravioli with sun dried tomatoes, capers and artichoke hearts.


Moroccan Beet Salad with Boiled Eggs and Cilantro.


Greek spicy chicken over white rice.


Steamed Artichokes.


Sesame Seaweed Salad.

Wednesday & Thursday

Wednesday I neglected to photograph lunch, it was basil fettuccini with capers and butter, grilled tuna, and spinach salad.

Wednesday night Wednesday night dinner was stir-fried vegetables with fried brown rice and tofu and a mixed garden salad with spinach and croutons with miso ginger dressing.




Thursday I didn't make lunch, the residents all went out to lunch and saw the new Coen brothers movie "Burn After Reading", while the facility had some sort of inspection done.

For dinner I made salmon baked in a tinfoil packet with lemon slices and Creole spices served over red quinoa and sauteed green bean and peppers as the veg.

Tuesday Dinner

Ahi Tuna Tartar, Seasoned Japanese Rice, French Green Beans, Mango Salsa, Seared Ahi Tuna Steak and Pickled Ginger.

Tuesday Lunch

Spinach Salad, gnocci two ways (one in olive oil, capers and fresh basil, the other in Alfredo sauce with fresh basil) and fresh asparagus.

My lens got fogged up by the piping hot gnocci, woops!



Monday Dinner

Salad and Greek Sauteed Chicken over Couscous.

Sunday Dinner (without me)


Turkey Breast Marinated in Lemon and Basil.
(I left it for staff to bake in my absence.)


Vegetables with herbs and olive oil, to be roasted.


Add a couple pre-packaged salads and it's a hearty meal!
