Holidays check-in.

This year, rather than spend more money than we plan to on tons of random useless token junk gifts for family, friends and coworkers, I got together with my family and donated over a dozen hams and turkeys to a project making holiday meals for over 500 people in need.

I also spent three days preparing and packaging the meals, along with dozens of other enthusiastic volunteers headed up by my old knife skills instructor, Evelyn Cheatham.

It was the best Christmas I have had in many years and I will definitely be doing this again next year if I am still in the area.

Friday-Sunday food.

FRIDAY FOOD:

Pear, broccoli, tomato, edamame and romaine salad.


Mmmm... home made corn bread.


Chili, shredded cheeses and diced onions.


Honey-butter and corn bread.


Friday spinach salad...


Chicken, apple and Gorgonzola sausages.

SUNDAY MAKE-AHEAD CASSEROLE:
Mac and cheese with mushrooms...


Wrapped up and ready to go in the oven for Sunday night dinner.

Thursday Lunch and Dinner


Frittata with asparagus, mushrooms, broccoli and potatoes.


Spinach and strawberries.


Seared Ahi Tuna and Japanese seasoned rice.


Shelled Edamame, steamed and sprinkled with sea salt..


Seaweed sesame salad (using Cynthia's hand-harvested local seaweed).

Finally!

I managed to photograph a frittata before it was cut.


Fresh figs and pears with spinach and blue cheese.


Vegetable bean soup with turkey.


Steamed asparagus.


Another yummy salad. A bit washed out.


Sauteed chicken with pan sauce over whole wheat couscous.


Egg and potato curry.


Veg. stir-fry and rice.


Greek salad with taziki(sp.) dressing.


Red quinoa.


Garden burgers and Boca burgers. There were also turkey burgers.

Thursday Lunch and Dinner

Lunch:

Spinach, gorganzola and strawberry salad.


Couscous, veggies with Mediterranean spices and falafel.


For dinner we had vegetarian chili, corn bread muffins and broccoli.
